Arkadia is a dry sparkling wine from a single expressive ingredient: 2.5 pounds per bottle of organically raised wild blueberries from the Midcoast and Downeast regions, fermented with their own yeasts and lightly filtered before undergoing a secondary fermentation in bottle.

It’s vibrant, light in body and alcohol, yet the flavors are intense, vivid and savory. It tastes wholesome and refreshing on its own, also serves as a versatile mixer, and is terrific with snacks and good, simple meals.

How it’s made

Primary process

The base wine is made very simply, no funny stuff: When we receive the fresh berries from our growers, we let them macerate for 2-10 days. We crush with our feet. Pressing is slow and gentle, aging is in stainless steel tanks. We filter lightly, add a low amount of sulfites during aging, resulting in zero free sulfites at bottling.

Secondary fermentation occurs in bottle with liqeur de tirage  and is not disgorged.
