Single-Site Sparkling Wine Made from Organic Maine Wild Blueberries
Source Decay is a dry, savory sparkling wine made from organic Maine wild blueberries grown on a single barren in Whiting, Maine. Flavors are deep, mouthfeel is simultaneously gentle and persistent, overall balance and harmony are striking. The bubbles, acidity and low alcohol enable it to successfully accompany simple snacks, elaborate dishes, spicy foods, and most things in between.

Source Decay is a wine made from organic wild blueberries from a single barren in Whiting, Maine, at the far northeastern tip of the United States of America, by the Beal Family, fifth-generation growers at Moon Hill Farm. The fruit is 100% destemmed, resulting in clean, gorgeous raw material.
Process
The day of harvest, we bring the berries to our Portland winery and foot-stomp to get the native-yeast fermentation going. The fruit then macerates on its skins for five days before being pressed, and the juice is then transferred to a mix of neutral tanks and used oak barrels to age for seven months.We rack once, and we don’t fine or filter. Secondary fermentation is by traditional method: a cane-sugar solution (with no yeast) is added to the wine which is then transferred to individual bottles. After seven months’ further aging,each bottle is disgorged by hand.
